Well, that was a fail...

Soooo, I planned on having a complete recipe for you.

Here's the story.

During this past week, I was searching for a cookie recipe to share with you guys. I found one that sounded great! I saved it, and decided to make them. I ended up traveling to take some more photographs, throughout the week and got back on Friday afternoon. Okay, cool. I can make the exciting cookies on Saturday! So, I get finished with some homework on Saturday, and think about the cookies. Really that's all I could keep thinking about since I found the recipe! LOL.

I'm pumped up! I'm excited! Let's do this!

I get out all the ingredients, the bowls, utensils, and preheat the oven to 350* just as the recipe suggests. I start the recipe, and I think to myself, ooooh lemon cookies sound amazing! Keep in mind that I am not using regular sugar, I am using Stevia. I am trying not to have so much sugar, so I purchased Stevia a while back and I don't really use sugar anyway. I don't make tea, I don't drink sugar in my coffee, and don't really bake anymore since my husband is trying to watch his weight. Anyway, back to the point.

I follow the recipe, and it calls for sugar. Well, I don't have sugar... So, I figure I could just put a little more vanilla, and Stevia, and it'll turn out fine. I'm finished mixing the recipe, so I add in some real lemon juice, and stir. It's always a must for cooks/bakers to taste their food, so I got a big chunk of cookie dough on the spoon (I love cookie dough!) and tasted it.

So, the new recipe is for cinnamon sugar cookies. Trust me, these are so good. They're like snickerdoodles, but not exactly like snickerdoodles. They are however, simple drop cookies.

Cinnamon Sugar Cookies

Cinnamon Sugar Cookies

Ingredients:

1 C. Sugar

1 C. (2 sticks) of unsalted butter or margarine, softened- not melted

1 tsp. Vanilla extract

1/8 tsp. ground nutmeg

1 egg

2 1/3 C. All-purpose flour

1/2 tsp. baking soda

1/8 C. ground cinnamon

Directions:

1. Preheat oven to 375*. Line your cookie sheet with parchment paper, and set it aside.

2. Beat sugar and better with electric mixer on low speed, or with a spoon until light and fluffy. Stir in vanilla, nutmeg, and the egg. Then, stir in the cinnamon, flour, and baking soda. Use a cookie scooper to make cookies all the same size, as you scoop them onto cookie sheet. If you don't have a cookie scooper, use teaspoon.

3. Bake 9-11 minutes, or until the outside of the cookie is golden. Remove from the cookie sheet onto the wire rack (I just use a long piece of foil, or parchment paper).

Well, there ya have it. I was hoping I would be able to make the others, but yeah. {We won't discuss that atrocity again}.
