Sunday Salsa!

Hi there my loves!

So today we are going to do some Salsa. No I don't mean the dance!! I mean the southern staple in Texas, that we make in batches to can, send to family, have at Sunday brunches, and as appetizers.. and sometimes just drink it straight from the bowl (if you're my mother)! Shhhh, don't tell her I told you that!

How about we just get to the recipe before I get myself in trouble, since she reads these things.

Let me tell you a little about this recipe.

I got this recipe from Mrs. Pioneer Woman, Ree Drummond. I have tried all kinds of recipes for Salsa, and even come up with my own.. let me just tell you- it was awful! Oh, and it was green.. LOL.

Anyway, so when I tried hers on Super Bowl Sunday.. I was prepared for it to taste bad (not because of her, but because I am TERRIBLE at making salsa!) I'll just say hers was fool proof!! I made it, and it was amazing! I added a little more garlic in it- we're garlic lovers! Move over vampires!!

::Salsa::

Ingredients-

Two 10-ounce cans Rotel One 28-ounce can whole tomatoes with juice 1/2 cup fresh cilantro leaves (or more to taste!) 1/4 cup chopped onion 1 clove garlic, minced 1 whole jalapeno, quartered and sliced thin, with seeds and membrane 1/4 teaspoon ground cumin 1/4 teaspoon salt 1/4 teaspoon sugar 1/2 whole lime, juiced

directions-

1. Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)

2. Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.

3. Refrigerate the salsa for at least an hour before serving.
