Recipe for the day!

Good evening to you all! How are you guys doing?

We're doing good, here in Texas.

We get to go to our hometown next week, and we're a little anxious. Got to take care of business, but that's the most of what we're going to do.

How was your weekend!?

I did mostly homework the entire weekend. Today was our "cheat day" for our low carb life.. and I must say that I thoroughly enjoyed the pizza for lunch and mexican food for dinner! hahahahaha.

Anyway, I owe you a recipe. So, please take a look below and you will see it.

Loaded Potato Bake

Yield: Makes 2 servings

Time: Prep 20 minutes

Cook 75 minutes

Ingredients:

2 lbs. Russet or Red skinned potatoes, cubed

2 scallions, chopped & set aside

2 cups extra sharp shredded cheese

6 pieces of bacon, cooked & set aside (or more, depends on what you like!)

2 tsp. butter

1 small container of sour cream (or ranch dressing if you prefer**)

Salt & Pepper to taste

Directions:

Preheat oven to 350 degrees. Grease a small baking dish. I'd say about a 9x13 pan should do it. Chop potatoes into small cubes if you haven't already.

Once potatoes are chopped into small cubes, and put into pan. Add 1/2 tsp of butter to each corner of the pan, salt & pepper, then put a sheet of foil over the top and slide it into the oven for 60 minutes**.

When it's time to take the potatoes out of the oven, you are going to take the foil off and add the cheese, bacon, and scallions. Place back into oven for another 15 minutes, uncovered.

Note:

**If you prefer ranch dressing, I highly recommend making your own. The taste from the bottled stuff really doesn't do any favors for the flavor of the dish. If you don't have the time to make your own, then it's up to you which you'd like to do.

**If your potatoes are not cooked all the way through after 60 minutes, then continue cooking them a little longer. Keep checking them though, because you don't want to over bake.
