Today is RECIPE DAY!!!

Today, the recipe I am going to share with you is Mexican Casserole. It is another one of my grandmama's recipes, and it is so good. I actually made it today, and I remembered to take pictures for you! How awesome is that!?

Mexican Casserole

Ingredients

1 lb ground beef or turkey

2 cans Cream of Mushroom soup

1 can Rotel tomatoes

1 can Ranch Style Beans

4 Cups Sharp cheddar cheese, shredded

1 pkg small corn tortillas

1 small onion, chopped small

Directions

Preheat oven to 350*. In a large pot or large skillet, brown the onions and ground meat. Season to your liking. While the meat is cooking, open all of the cans you will be using.

When the meat is done, pour all of the canned ingredients into the pan. Bring to boil, then reduce the heat to medium. It should look like the picture below.

Okay, while your mixture is still cooking on the stove, get your corn tortillas laid out into your 9x11 baking dish. I didn't have one, so I just bought a lasagna pan from the market.

When you have the corn tortillas laid out in the pan, then pour half of the mixture into the pan on top of the corn tortillas. Layer more corn tortillas in pan, then add the rest of the cheese on top of the mixture to cover.

Bake for 30 minutes at 350*. When it's the last 5 minutes of baking time, turn your oven onto broil to brown the top.

I left mine in there a little longer than I should, but it was still delicious!
