So. Many. Blessings.

Heab always says, "When God blesses you, it's like drinking from a fire hose."

So, you guys. We have been at this RV park for about 2 full days now. Let me just tell you, God has put one blessing in our lap after another. We have met so many nice people! There is one specifically I want to give a shoutout to, and her name is Mrs. Vivian. She has been such a blessing to me. She reminds me so much of my Aunt, that I don’t get to see anymore. It’s so awesome to have such wonderful people in my life. This is a new chapter of my and Heab’s life. We couldn’t ask for anything better!!

Sorry, had to be a little mushy for a second… Now, I will get on to putting this recipe up that I promised you!! It’s soooooooo yummy. I promise you can trust me! Lol. The only thing is, I followed this recipe exactly.

Chicken fried rice

Ingredients

  • 2 tsps. sesame oil

  • 1 tbs. minced garlic

  • ¼ tsp. red pepper flakes

  • 1 pound boneless, skinless chicken breast- chopped into 1 inch pieces

  • 24 oz. brown rice, cooked- set aside

  • 1 small onion, diced

  • 2 c. frozen peas & carrots mix

  • 6 scallions, thinly chopped

  • 2 eggs

  • ¼ c. soy sauce (red. sodium, ok)

  • 2 tsps. Oyster sauce

Directions

  • In a wok or a large skillet, heat 1 teaspoon of the sesame oil over medium-high heat. Add the garlic and red pepper flakes and stir constantly using a wooden spoon or spatula for 1 minute or until fragrant.

  • Increase the heat to high and add the chicken. Cook for 4 to 6 minutes, turning and moving the chicken constantly while cooking. Scrape the chicken and garlic onto a plate and set aside.

  • Cook the rice according to package directions. Set aside.

  • Add the remaining 1 teaspoon of sesame oil to the pan. Once hot, add the onion, peas and carrots, and half of the scallions and stir-fry, constantly moving the mixture until the onions and carrots soften, 3 to 5 minutes.

I made it another time (didn’t follow directions), and it was so terrible!! Oh my gosh, we still ate it… but it was aw-ful!
